Asparagus & Feta Cheese Frittata!
Serves 8
Cooking time: 30 min
Ingredients:
* 1/3 cup of brown onion finely chopped
* 12 asparagus steamed and cut into pieces
* 8 large eggs at room temperature
* 70 g feta cheese pat dry, cut in squares
* 25 ml of cold water
* 25 ml of cold milk
* Olive oil
* Butter
* Rubber spatula
Procedure:
1. In a bowl whisk the eggs, water and milk
2. In a cast iron or non stick pan at low heat add the olive oil and melt the butter
3. Add the onion and stir for a couple of minutes
4. Add the asparagus and stir gently. Season with salt & pepper
5. Pour the eggs
6. Sprinkle the feta cheese evenly over the frittata and cover for 8 min.
7. Carefully run a rubber spatula around the frittata edge
8. Flip the pan from side to side for the uncooked egg to reach the edges
9. Let it cook for a couple of minutes and run the rubber spatula around the edge.
10. Repeat this process until the egg are almost set
11. Remove pan from heat and let it to cool down
12. Cut into 8 pieces
Serving recommendations:
* Serve with fresh salad and toasted bread
* Left overs can be wrapped individually in freezer film squares and stored in the fridge in an air-tight container for a couple of days
