Pork Pibil style / Cochinita Pibil!

Cooking time: 3 hrs + Marinating overnight

Ingredients:
Meat:
* 1 k pork leg
* 1 garlic clove
* 1/2 onion sliced
* Sea salt
Pibil sauce:
* 200 g achiote paste
* 2 cups orange juice
* 25 ml lime juice
* 2 garlic cloves
* 1 cup apple vinegar
* 1/2 tablespoon olive oil
* 1 1/2 teaspoon of sea salt
* Pepper
* 1/2 teaspoon oregano
Onions:
* 2 red onions
* Jalapeño chili (optional)
* 1 cup white vinegar
* 1 teaspoon oregano
* 1 teaspoon olive oil
* 1/2 teaspoon of sea salt
* Pepper
Procedure:
Pibil sauce:
1. Blend achiote paste, orange & lime juice, garlic, vinegar, olive oil, salt & pepper, oregano
Meat:
1. Cook in pressure cooker for 20 min
2. Let it cool down and shred the meat
3. In a glass container add the meat and pour the Pibil sauce over the meat, cover with plastic wrap & marinate overnight
4. The day after, cook for 1 hour at low heat
Onions:
1. Cover onion with hot water for couple of minutes and drain
2. In a glass bowl add the onion, chili, oregano, olive oil, salt and pepper
3. Marinate overnight
Serving recommendations:
* Garnish pork pibil, garnish with the marinated red onions
