Chicken Tinga (Tinga de Pollo)!
Serves: 2
Cooking time: 20 min
Ingredients:
* 1/4 cup of sliced onion
* 1 teaspoon olive oil
* 2 tomatoes halved
* 1 small garlic clove
* 1/4 cup of chicken stock
* 1 teaspoon of chipotle chili without seeds
* 200 g shredded chicken breast
* 1 teaspoon sea salt
* 2 bay leaf
Procedure:
1. In a saucepan at low heat add the olive oil and the onion, cook for 3 to 5 minutes until translucent
2. Blend the tomatoes with the garlic, and chicken stock until smooth
3. Add the tomato sauce to the saucepan and cook for some minutes until it starts simmering
4. Add the chipotle chili, chicken and bay leaf, cook for 5 min.
Serving recommendations:
Prepare tacos with warm corn tortillas, spread some Mexican refried beans*, sprinkle feta cheese, chopped lettuce and sour cream. Enjoy!
