Mexican Picadillo!
Serves: 8

Ingredients:
* 1 cup of onion finely chopped
* 1/2 kilo of premium pork mince meat
* 1/2 kilo of premium beef mince meat
* 2 zucchini finely chopped in cubes
* 1 carrot finely chopped in cubes
* 1 potato finely chopped in cubes
* 1 teaspoon of Olive oil
* 2 bay leaves
* 1 & 1/2 teaspoon of sea salt or herb sea salt
Sauce:
* 5 tomatoes
* 1 garlic clove
* 1/4 of onion
Cooking utensils:
* Nonstick pan
* Cast iron casserole
Procedure:
1. In a nonstick pan at low heat add a teaspoon of olive oil and the onion, cook for 3 min., until translucent
2. Add the meat and spread it using a wooden spoon mixing until cooked
3. Transfer meat to a cast iron casserole at low heat
4. Blend the tomatoes, garlic, onion until smooth
5. Add the tomato sauce to the meat
6. Add the carrots and potatoes
7. Add the zucchini
8. Add the bay leaves
9. Season with sea salt
10. Mix gently, cover and let simmer for 30 min
Serving recommendations:
1) Mexican Picadillo can be served in corn tortillas as a taco, or in a plate
2) As sides, Mexican Picadillo can be accompanied with Mexican style rice in tomato sauce* and Mexican whole or refried beans*.
