Mussels in tomato sauce!

Serves: 2

Preparation & cooking time: 40 min.

Ingredients:

  • 1 1/2 tablespoon olive oil

  • 1 kg of prewashed, live & cleaned mussels

  • 1 brown onion sliced

  • 2 tomatoes sliced

  • 1 can of diced tomatoes (400g)

  • 2 cloves of garlic finely chopped

  • 1 cup of dry white wine

  • 4 leaves of fresh basil chopped

  • 1/4 cup of fresh parsley leaves chopped

  • sea salt and pepper to taste

Procedure:

  1. Remove mussels from the fridge 15 min. before starting your cooking preparation

  2. Place mussels in a colander under running cold water, using one mussel to scrub the others to clean their surface, discard broken shells, also discard open shells if these when gently tapping them are not closing

  3. Heat oil in a large wok or large deep saucepan over low heat, add onion, garlic, season with a pinch of sea salt and pepper, stir and cover. Cook for about 8 min.

  4. Add sliced tomatoes, cover and cook for 4 min.

  5. Add wine and stir gently, cover and cook at medium heat for 5 min.

  6. Add canned tomatoes, basil, cover and bring sauce to the boil

  7. Add mussels, cover and cook for a couple of min. gently shaking the wok or saucepan ocassionaly until mussel shells start to open

  8. With a slotted spoon, remove shells as they open and place them into a large serving bowl

  9. Remove sauce from heat and set aside

  10. Debeard mussels if necessary

  11. Return the sauce to the boil and pour it over the mussels.

  12. Garnish with parsley

  13. Serve with sliced bread
