Apple, cinnamon and maple cupcakes!

Ingredients:
Cupcakes:
1 1/3 cups plain flour
1 tablespoon baking powder
1 cup rolled oats grounded
1/2 cup raw sugar
2 teaspoons ground cinnamon
1/2 cup milk
80g of unsalted butter (melted)
1/4 cup maple syrup
1 tablespoon vanilla extract
2 egg whites
1 cup apple peeled and finely chopped
Cupcakes decoration:
1/4 cup apple peeled and finely chopped
1/4 cup pecans or walnuts
Icing sugar & maple syrup glaze:
1/4 cup icing sugar
1 1/2 tablespoons maple syrup
Procedure:
Preheat oven to 200C
Grease the cupcakes tray
Sift the flour and baking powder
Combine with the oats, sugar and cinnamon
Beat the egg whites into soft peaks
Combine the milk, butter, maple syrup and vanilla and mix with the dry ingredients
With a metal spoon, slowly incorporate the egg whites, adding a spoon at a time
With a rubber spatula carefully stir in 1 cup of the chopped apple
Pour mix into the baking tray using an ice cream spoon
Sprinkle each cupcake top with chopped apple, pecans or walnuts
Bake for 20 to 25 min
Once the tray has cooled down, transfer the cupcakes to wire racks
Mix the icing sugar and maple syrup until smooth
Place baking paper under the wire racks
Drizzle the glaze over the cupcakes
